...is frightful. The balmy, sunny weather we had this past weekend was a cruel joke. Last night, the wind blustered and knocked things around all night. This morning, it was back to being frigidly cold. Spring?? Hello? where are you?..... (I know it's only January, but still.)
Cold weather calls for cold-weather soup. Margo asked me a while back to post the recipe for the pumpkin soup I made, so here it is:
Chipotle Pumpkin Black Bean Soup
- 2 teaspoons olive oil
- one large onion, chopped
- 2 cloves garlic, minced
- 1 chipotle chile in adobo sauce, finely chopped; 1 tablespoon adobo sauce reserved
- 1 bottle dark beer
- 1 can pure pumpkin puree (15 oz.)
- 1 1/2 teaspoons ground cumin
- 2 pinches ground cinnamon
- salt and pepper
- 3 cups chicken broth
- 1 can black beans, drained (15 oz.)
In a soup pot, heat the olive oil over medium-high heat. Add the onion, garlic and chipotle with one tablespoon reserved adobo sauce and cook, stirring, for five minutes. Add the beer and cook until reduced by half, about three minutes. Stir in the pumpkin, cumin, cinnamon and salt and pepper, to taste. Stir in the chicken broth and beans and simmer for 10 minutes.
Modifications I would make for next time: LESS CHIPOTLE!! VERY SPICY! I would probably use only half a chipotle and no adobo sauce, or maybe just the adobo sauce. I would also consider using less chicken broth (for a thicker consistency) and more than 1 can of black beans (but I love black beans, plus they're great protein and fiber). You can probably substitute the beer with chicken broth, if you'd rather not use beer.
Garnishes: tortilla chips? cranberry sauce? lime juice/wedges? apple slices? cilantro? my favourite was yogurt

Ohhhh. I like that you don't have to carve a whole pumpkin. Where do you find chipotoles in adobo sauce? I've looked everywhere here, and can't find it. Maybe that's what you get when your immigrant population is from the east rather than the south.
yep, no pumpkin carving. I don't think that would be worth it. But make sure you use pure pumpkin puree and not pumpkin pie filling. :)
As for chipotles, we had trouble finding them too. They seemed to be hidden away in strange spots in the grocery store. Maybe try by the salsa section? I think I found them in the "Latino" section. Can you find dried chipotles? Those would work too, since I'm not sure the adobo sauce is that necessary. Just soak them in warm water for 20 minutes or so.

Margaret - i found the chipotles in the Mexican section of Save - on Foods but i couldn't find them in adobo sauce. I didn't end up using the peppers at all and it still turned out yummy.
